Vanilla Cupcakes

5oz Butter
5oz superfine sugar
6oz self rising flour
3 eggs
1 tsp vanilla extract

Preheat oven to 350 degrees F

Line 12 cup cake pan with cupcake papers

Lightly beat eggs & combine all ingredients

Beat with electric mixer for 2 minutes, until light & creamy

Pour into cake cases

Bake 18-20 minutes until risen & firm to touch

Cool on wire rack allowing to fully cool before icing
